Fresh, flavourful, family-friendly, and fantastic food! At each one of my vegetarian cooking classes, you can expect to eat well, laugh well, and learn much. Learn how to make a variety of mouth-watering recipes, how to buy, use, and store ethnic ingredients, and take home advice on how to cook healthy meals without sacrificing flavour. Although my focus in class will be on vegetarian cuisine, I also provide plenty of helpful cooking tips and techniques that can be applied to all aspects of home cooking.

Foundations of Flavourful Vegetarian Soups
Not just a collection of gourmet recipes, this class will teach you the key techniques needed to create soups that are rich in flavour, depth, and body. Learn why so many vegetable stocks are insipid or off-tasting, how to build layers of flavour using simple ingredients, and how to use ethnic foods to enhance the taste of ordinary soups. Introduction to Tofu
Whether you are new to tofu, or have given up on it, this hands-on class is a great way to get comfortable with tofu. Our chef will guide you through the world of tofu, from a discussion of different brands and types, to hands-on cooking and sampling from a variety of different tofu dishes. These include: marinated tofu, crispy tofu stir fry, spiced tofu tacos, silky chocolate pudding and other tofu delights.

Taco Party! II
A continuation of my previous Taco Party class, tonight we will expand our repertoire of authentic, lip-smacking taco fillings. The wonderful techniques learned in class will have you turning out delicious Mexican food like a pro. Tonight’s menu includes fillings of juicy spiced chicken, chile-simmered steak, as well as two traditional vegetarian fillings. Our fabulous side dishes tonight include red almond rice, roasted chile salsas, authentic crema, and Mexican Hot Chocolate.

Discover the bounty of our Islands! You have heard about the 100-mile diet, but how do you practice it? This class will help. From the best places to find locally-raised meats and seasonal produce, to small farm gems and luxury products, learn about the wonderful variety of local food products available to us. Through a hands-on cooking component, we will learn to cook with the seasons and find the best that our Island has to offer. Local Food Challenge
The hardest part about the 100-mile diet is in getting through the late winter and early spring. However, there is a bounty of food available on our islands at even the leanest times, and this class will get you started. Through delicious recipes and samples, and information about winter farm stands and food preservation techniques, this class will cover the basics. Learn where to shop in the winter for local produce, how to get the best from local winter vegetables with excellent cooking techniques, how best to plan your winter menus, which preservation techniques to use for which foods.

Field to Plate: Roots and Squashes
This cooking class is one of a special series and provides participants with something more than just a new recipe or technique. Conducted by farmer Michael Ableman and Chef Heidi Fink, this class will begin in the fields, harvesting and tasting seasonal ingredients and learning about the history of various foods and the ways in which they are grown. The class will then move to our kitchen/classroom where Chef Heidi will demonstrate several dishes followed by a shared sit down meal. This final class in the Field to Plate series will focus on root vegetables and squashes, the most bountiful and satisfying vegetables of the fall harvest.

Pie-Making 101
Daunted by pastry? Frustrated by repeated pie failures? Join this fun, informative, hands-on cooking class, where Heidi will guide you through the step-by-step process of making pie. Eliminate the frustration and learn to love pie-making with my down-to-earth, straightforward tips and techniques. The class will focus on basic fruit pies, but will also cover the essentials of single-crust pies, custard pies, galettes, and more. Each participant will make their very own fruit pie from start to finish and take it home to impress their family and friends. “Easy as pie”! Note: Pies will be made with your choice of fat: butter, homemade lard from non-medicated pork, or non-hydrogenated shortening. Please make sure to eat a nutritious meal before this class, since we will be enjoying only pie in class.
